Ragda Pattice Recipe | Filiz Flavour
Ragda Pattice is an all time favourite street food for people of Maharashtra and Gujarat! This dish consist of crispy potato pattice topped with pea curry and who doesn’t like khatti meethi and tikhi chutney on top with some sev?

RAGDA
Ingredients:
White chick peas - 2 cups (raw)
Cooking oil - 2 tbsp
Mustard seeds - 1tsp
Hing (Asafoetida) - 1 tsp
Ginger Chilli Paste - 1 tbsp
Turmeric Powder - 1 tbsp
Red chilli powder - 1 tbsp
Coriander powder - 1 tbsp
Bay leaves - 2
Cloves - 2
Cinnamon stick - 1
Salt to taste
Baking soda - 1 tsp
Fresh coriander leaves - 1 tbsp
Recipe:
1. Wash the chickpeas with water and soak them in water for minimum 5 hours or overnight.
2. Set a pressure cooker on medium flame and add oil to it. After oil is heated add mustard seeds and hing. After few seconds add cloves, bay leaves, cinnamon stick, ginger garlic paste and green chilli paste. Saute it for a minute.
3. Now add red chilli powder, turmeric powder, coriander powder and mix well. Add a splash of water to prevent masalas from burning.
4. Add the soaked chickpeas and mix well. Add enough water so that chickpeas are submerged completely.
5. Add salt and baking soda. Cook for a minute. Give it a nice stir and close the pressure cooker.
6. Let is whistle 5-6 times on a medium flame and let it depressurise completely on it’s own.
7. Turn the gas on to medium heat and cook again for 4-5 minutes.
8. Add garam masala and freshly chopped coriander leaves. Mix everything and cook it well for 5-6 minutes. Keep stirring occasionally. And our Ragda is ready!
ALOO PATTICE
Ingredients:
Boiled potatoes - 5 to 6 medium size
Salt to taste
Ginger garlic paste - 1 tbsp
Fresh coriander leaves - 1 tbsp (chopped)
Fresh green garlic - 1 tbsp (chopped)
Fresh mint leaves - 1 tbsp (chopped)
Coriander powder - 1 tsp
Green chilli paste - 1 tbsp
Garam masala
Gram flour - 3 tbsp
Oil for shallow frying
Recipe:
1. Mash the boiled potatoes and add all the ingredients mentioned above.
2. Mix everything well and break the lumps.
3. Take a spoonful of potato mixture and shape it into tikkis.
4. Take 3 tbsp of gram flour in a plate and coat the pattice.
5. Set a tawa on a medium flame and add oil. Shallow fry the tikkis from both sides until they are golden brown.
Green Chutney
Ingredients:
Coriander leaves (fresh) - 1 cup
Mint leaves - 1/3 cup
Garlic cloves - 5 to 7
Green chilli - 3 to 4
Lemon juice - 1/2 spoon
Nylon sev - 2 tbsp
Salt as per taste.
Recipe:
1. Wash coriander leaves, mint leaves, garlic cloves and green chilli with water.
2. Chop everything roughly.
3. Put everything in a mixer and grind it.
4. Grind until it forms a smooth paste.
5. Add little water if needed and grind it again.
6. Consistency should be thick but pouring.
Mithi Chutney/ Dates chutney
Ingredients:
Seedless dates - 250 grams
Jaggery - 3 tbsp
Cumin seeds - 1 tsp
Whole lemon juice - 1 tsp
Red chilli powder - 1 tsp
Black salt - 1 tsp
Salt as per taste
Recipe:
1. Soak dates and jaggery together for 4 hours.
2. Assemble everything in a mixer and grind it well to make a smooth paste.
3. Add water if required.
4. Consistency should be thick, smooth and pouring.
Serving
Requirements:
Aloo Pattice
Ragda
Chopped onions
Chopped tomatoes
Green chutney
Mithi chutney
Sev
Chopped Coriander leaves
1. Place the aloo pattice in a bowl or plate.
2. Top it with 2-3 spoonful of ragda.
3. Now add green chutney and mithi chutney we prepared. (1-2 spoon each)
4. Top it with onions and tomatoes.
5. Last but not the least sprinkle sev.
6. Garnish it with coriander leaves.
